It’s time to make dinner again. What are you going to eat? I know those days where you have lots of time and can slowly make a meal and truly enjoy the process. I also know those days where you’re already starving, and/or you’re low on time. These are the dishes to save you! These are 18 of my favourite vegan dinners that are done in under an hour. And when I say under an hour, I really mean it, by anyone’s clock. I’ve left out anything with extra steps of prep and I’ve kept it pretty simple. All of these (I’ll admit, of which there are many curries) come together in just a few steps and many of them in just one pot.
