There’s nothing I love more in the spring and summer than a big bowl of salad! I often order them at restaurants and enjoy them for lunch or dinner at least a couple of times a week. A new favorite salad is this bright apple salad, which makes a great side dish, or can be filling enough to enjoy on its own with a slice of French Bread! Why we love it:

Ingredients
tangerines olive oil lemon juice – about 1 to 1.5 tablespoons clove garlic lemon zest salt baby greens (spring mix) – is a mixture of young leaves and often includes arugula, chard, endive, radicchio, baby spinach, and other heirloom lettuces. walnuts- or other nuts like pecans or pistachios feta cheese – or goat cheese apples – Envy, Honeycrisp, Fuji, Granny Smith apples, or any kind you prefer. avocado

Storing Info
Make ahead of time. Prepare the dressing 1-2 days before. The apple salad recipe can be assembled a few hours before serving, but be sure to treat the apples and avocados with Balls Fresh Fruit. Don’t add the dressing until right before serving. STORE. Depending on how much dressing the salad has on it leftovers can be stored in an airtight container in the refrigerator for 1-3 days.
