Avocado Chicken Salad makes a tasty lunch. We like to serve it up as a sandwich, similar to classic Chicken Salad or Egg Salad.

QUICK + EASY LUNCH

Avocado Chicken Salad is fresh and simple. This lightly dressed filling is perfect for serving on bread in sandwich form, or on a bed of lettuce for something lighter. When I’m wanting something healthy and fresh, this is a go to choice. I love that it whips up in a flash, which makes it easy to grab and go. That helps me stay on my healthy eating goals. Speaking of healthy, this recipe has no mayo in it! The avocado acts as the binding agent for all the other ingredients and gives it that creaminess. If you love this avocado chicken salad recipe, you’ll also enjoy Chicken Salad or Egg Salad. Both are also great as a sandwich or salad.

MIX. In a medium bowl, combine shredded chicken, chopped scallions, chopped celery, diced avocado, lime juice, chopped cilantro, cayenne pepper, salt and pepper. Stir together until well mixed. SERVE! Serve fresh on its own or on a sandwich or crescent roll.

This recipe is packed with delicious complimentary flavors. Should you wish to change things up you can easily use some of these delicious ingredients:

veggies: roasted corn, diced tomatoes, diced cucumber, red onion, green onion sliced boiled egg crumbled bacon shredded cheese

Recipe Tips, Additions + Storing info

Easy Salad, Sandwich or Snack: This recipe is great on its own or you can choose to serve it as a sandwich. I particularly enjoy it on a croissant. It’s also delicious as a lettuce wrap, in pita bread or served on crackers. Shredded Chicken: This is my favorite Shredded Chicken Recipe that I use and I often double the amount of chicken. Once the chicken has been shredded I divide it into 1 cup bags and store them together in the freezer. This way I always have some on hand.  You can also use shredded rotisserie chicken or even good quality canned chicken.  Make ahead: Prep some of the other ingredients the day before and keep them stored in separate containers. Due to the avocado, I would avoid mixing all the ingredients together too far in advance, 2-3 hours before serving would be just fine. STORE leftovers in an airtight container for 1-2 days.
