This recipe was born many years ago, during a winter storm. That day I wasn’t feeling like cooking. I just wanted something easy to prepare, quick and comforting. And this Cheesy Gnocchi Casserole checks all the boxes! It takes 20 minutes. Yeap, you read well…20 minutes! There is something about pulling a warm, bubbling cheesy casserole from the oven that screams comfort food, and you can bet this casserole is cheesy! I used Parmesan, Mascarpone, and Havarti … A cheese lover heaven! LOVE LOVE LOVE  the way this Cheesy Gnocchi Casserole recipe turned out with all the cheesy goodness! It’s quick, easy, and comes together in a flash. This Cheesy Gnocchi Casserole is a meatless dish, but because the mushroom has a modest amount of protein, I think we are good. I also added some spinach. We love the mushroom-spinach combination. Ah, perfection! No other words can describe this delicious dish. The sauce is amazingly tasty, and everything comes together in less than 20 minutes.
