Hi everyone! You know by now that I am a complete freak when it comes to anything relating to chocolate chip cookies. On any given day, I could eat 20 cookies without blinking! I have a delish mini version called Chocolate Chip Cookie Bites for you to enjoy. The original recipe called for a store bought nestle dough. I’m sure that would have been yummy too, but we decided to use one our favorite from scratch recipes. Or use one of our many other chocolate chip cookie recipes:

DOUGH. Prepare your favorite cookie dough according to the instructions. SCOOP. Place a scoop of dough into 24 heavily greased mini muffin cups. Press along bottom and sides, making a cup. BAKE & PRESS. Bake at 350 for 9 to 11 minutes or until edges are set and golden. Once removed from oven, take your cookie scoop, or a round teaspoon, and press down in the middle (while hot), to create a perfect cup. Cool in pans for 5 minutes, then carefully remove to wire racks to cool completely. CHOCOLATE FILLING. When cookies have cooled, melt your chocolate chips in a small pot, over the lowest heat setting, stirring constantly. Be sure not to over heat chocolate. Once melted and smooth, poor into a plastic bag. Snip one corner and squeeze chocolate into each cup.
Tips + Variations
This recipe is for making mini chocolate chip cookie bites, but you can easily use a regular sized muffin tin to create a larger cookie cup. Press two scoops of dough evenly into each greased muffin spot. Set the oven to 325ºF and bake for 20-25 minutes or until done. If needed, press in the center while the cookie is warm. Allow them to cool before removing them from the pan and then fill with delicious chocolate or other sweet goodness. Melting the Chocolate
Melt them in the microwave and stir them after each 30 seconds. Melt in a double boiler situation Fill a small pot of water 2/3rds of the way full and place a bowl full of the chocolate above the water without letting it touch it. Keep the water boiling and stir the chocolate consistently until it’s fully melted.
Additions/Variations
Use a fun flavor of cookie dough like red velvet, chocolate, or funfetti Fill it with other delicious treats: Cream cheese frosting with a topping of berries White chocolate Peanut butter or other nut butter Melted salted caramel Ice cream Marshmallow cream
Storing Info
STORE the cookie cups in an airtight container or Ziploc bag. They will keep at room temperature for 5-7 days. FREEZE in an airtight container or Ziploc bag for 1-2 months.
