Cuban Quesadillas are always a big hit in our house! I love them because they’re ridiculously easy to make! Basically, quesadillas are tortillas stuffed with cheese, lots of cheese, and whatever else your heart desires – the sky’s the limit. Then pan-fried until the outside is crisp and the inside is melted and oozing. Believe me, It just doesn’t get any easier or more delicious than this! You all know that the authentic Cuban sandwich is made with roasted pork but since I was not going to roast a whole “Lechon” for this recipe, I decided to make Cuban pulled pork in my slow cooker.
