Creamy Cauliflower Soup
There are several soup recipes that remind me of my childhood, one being the recipe I’m sharing today – Cauliflower Soup (along with other favorites like Cheesy Potato Soup and Taco Soup). I wasn’t always a fan of cauliflower, especially as a kid, but surprisingly loved this soup. In fact, I crave this recipe all the time because it’s so easy, cheesy and CREAMY. One of the main reasons I learned to love this recipe was because I realized that Cauliflower doesn’t taste like much, but it tastes so flavorful in this recipe (it’s very similar to broccoli). My mom first got this recipe from a family friend at church and has been making it for years. It calls for dried beef which is an ingredient I rarely have (in fact, I’ve never bought it before making this recipe). Instead of using the dried beef, you can just omit it or can use bacon instead. I typically use bacon since I always have that on hand.
How to Make Cauliflower Soup
This cheesy cauliflower soup recipe is SO simple! We have yet to try it in the slow cooker but think it would be just as easy. It really only takes just a few minutes to prep… You’ll need these cauliflower soup ingredients:
water cauliflower potato flakes cream of mushroom soup cream cheese dried beef or bacon cheese
To make this soup, begin by putting the cauliflower chunks in a pot of water and bringing it to a boil. Reduce the heat to low and mix in remaining ingredients (minus the cheese) and simmer for 15-20 minutes. Once it is done simmering, you can serve warm and top with:
additional bacon shredded cheese green onions/chives parsley croutons
How do you Thicken Cauliflower Soup? Add flour, cornstarch or other thickeners to make your soup more thick. Can you reheat Cauliflower Soup? Of course! Store the soup in an air-tight container for up to 3 days. To reheat, add to a pot and cook on low heat. Add milk or chicken broth to thin a bit and stir until heated through. Can you Freeze Cauliflower Soup? Yes, but we definitely recommend eating this fresh! To freeze, let cool completely and place in a freezer-safe container or Ziploc bag. To reheat, let thaw in fridge and then follow our reheating instructions.
