Packed lunches can get monotonous, but these flatbread pinwheels are a great way to spice things up along with Lunch Kabobs and Pizza Roll Ups!

School time is here!!

We know the kids can get a little bored with a sandwich every day so we thought we would come up with some more ideas that are filling, delicious and simple to make. That is when I came up with the idea for Flatbread Wrap Bites. I wanted to be able to make one Flatbread wrap and cut it up into pinwheels to add to the kids’ lunches. On days I have more time, I could make a variety of wraps, cut them up, and then mix and match the wrap bites for each kids’ lunch. These Flatbread Wrap Bites are so simple to make and have endless varieties. The kids’ favorites include:

Ham & Swiss Chicken Cheddar & Lettuce Pepperoni Pizza Other varieties: Turkey & Cheese and Peanut Butter & Jelly

Easy to Assemble

For these particular wraps, we used Flatout Light Original and included the following ingredients for each wrap:

Ham & Swiss – added mayonnaise Chicken, Cheddar & Lettuce – added mayonnaise and mustard Pepperoni – added Mozzarella slices and pizza sauce

ROLL. Assemble desired ingredients on flatbread, and roll into a wrap starting on the short side of the flatbread. CUT. Use toothpicks to hold wrap together, and cut into pinwheels (at least 1.5 inches thick) using a serrated knife for best results. Serve cold. Simple, fresh and delicious!

Tips + Variations

The simplest way to roll a wrap for a pinwheel is to lay out all of the ingredients as shown in the post and then to approach from one side and roll it tightly together. Start small and compress the roll together as you’re rolling. Once that is complete cut the ends off both sides and cut the remaining roll into about one inch sections for your little pinwheels. Flatbread with whole wheat has a good amount of nutrients, similar to whole wheat bread.  Variations:

Add more chopped vegetables like bell peppers/tomatoes or pieces of lettuce! Make this recipe gluten free by finding and using a gluten free wrap option

Storing Info

Make some of the types ahead of time. I wouldn’t suggest making any of the recipes that include juicy vegetables because there is a high chance of the extra liquid making the wrap soggy and gross. The most “ahead” of time I would make these would be in the morning before the kiddos take them to school. STORE the veggie free wraps in a Ziploc or air tight container for up to 2-3 days.
