We love a good green bean casserole, especially at holiday dinners. It really is just a classic that we all love. Green bean casserole with bacon is a fresh version offers a tasty and delicious twist!!! Fresh green beans add a crisp and bright base. The bacon and fried onions are salty, savory, and take this side to the next level! It is utterly to die for. This is our new fav go-to green bean casserole. The pan is sure to be wiped clean when this is served up on the table. The kids were fans of the added bacon, and my hubby thinks you can never have too many fried onions!

Just mix and bake!!

PREP. Preheat the oven to 350°F. GREEN BEANS. To cook the green beans, bring a pot of water to a boil. Once boiling, add the cut green beans and cook for 6-7 minutes. Drain. MIX. Add the soup, milk, soy sauce, pepper, cooked beans, 2/3 c of the onions and most the bacon (save a bit to add at the end) to a  1 1/2-quart casserole (8×10 pan) and stir. BAKE. Bake uncovered for 25 minutes or until hot and bubbling. Give the mixture a stir and the sprinkle the rest of the onions and bacon pieces evenly over the top. Bake for another 5 minutes until the onions are a golden brown.

Tips + Storing Info

Canned Green Beans: I personally prefer using fresh green beans, but you can substitute them with 3 (14.5 oz) cans of  green beans. Be sure to drain them before mixing up the casserole. Cooking the Green Beans: Precook the green beans before assembling the casserole. However, don’t overcook them or else they’ll get too mushy. 

Bring a pot of water to a boil. Add the green beans.Boil fresh green beans for 2-3 minutes. Cook frozen green beans for 3-5 minutes. Drain 

Make it Cheesy: Cheese elevates just about every dish and this casserole is no different. You can Mix in 1 cup shredded cheese of your choice.  STORE leftovers in the fridge for up to 3 days. To reheat, preheat the oven to 350 degrees. Cover with foil and bake for about 15 minutes per pound. If the fried onions need to be a little more crispy, broil on low for 2-3 minutes.  Make Ahead: Assemble the casserole up to 48 hours in advance. Do not add the french fried onions until you’re ready to bake it. Cover the dish and store it in the fridge.
