Pizza + Cookie = Pizookie
We have many restaurants around us that have become favorites because they all serve the same delicious dessert – PIZOOKIE! What is a Pizookie? A Pizookie is a cookie baked in a large circle like a pizza. Since first having these long ago, we now make our own pizookie recipe at home using our favorite cookie dough (chocolate chip) and purposely under-bake it in a cast iron skillet. The cookie is nice and crisp on the edges and deliciously gooey in the center. Then, we top it with a generous pile of ice cream. It’s INCREDIBLE! Top it with caramel sauce or chocolate syrup or use another dough base like our red velvet cookies or white chocolate macadamia dough for more flavors!
Ingredients
PREP TIME: 5 minutes COOK TIME: 18 minutes
½ cup brown sugar – light or dark brown sugar ½ cup granulated sugar ¼ cup unsalted butter – see How to Soften Butter Quickly ¼ cup vegetable oil 1 egg – room temperature ½ teaspoon baking soda ½ teaspoon salt ½ teaspoon baking powder 1 teaspoon vanilla extract 1½ cups all-purpose flour – see How to Measure Flour 1 cup milk chocolate chips – butterscotch chips, peanut butter chips, milk, dark or semi-sweet chocolate chips, or white chocolate chips 2-3 scoops ice cream – or your favorite flavor optional mix-ins – macadamia, walnuts, or almonds, or add toffee bits, M&M’s, or Reeses Pieces optional toppings – Hot Fudge Sauce or Caramel Sauce
