Salad Season is Here

I’m so glad it’s “salad season!” I know you can eat salad any time of year, but we especially love it during the spring and summer. Are you the same way?! As we gather with friends and family, we all bring different dishes, usually salads and sides. This Pizza Salad is a tasty favorite – something a bit different than the norm. Pizza Salad is so tasty and has some of my favorite ingredients including cannellini beans, pepperoni, Feta, and Parmesan cheese. You can make a homemade Herb dressing (in the recipe below) or Italian dressing is great with it too!

How to make pizza salad

Just toss! Almost all of these ingredients are prepackaged and only the cherry tomatoes really need to be washed/chopped. That makes for easy prep! Just throw it all together in a bowl, and you have a beautifully assembled salad. Dressing. Don’t add the dressing to the salad until right before serving. Or, serve it on the side so your leftovers won’t get soggy.

Recipe Tips

Lettuce. Use your favorite lettuce. I like using a spring mix, but you can use a bed of torn iceberg lettuce, romaine lettuce, and chopped radicchio.  Pizza crust. Serve this Pizza Salad recipe in a large bowl or on top of a baked Pizza Crust. The crust can be torn and eaten alongside the salad.

Simply press the pizza dough into a sheet pan, drizzle on a bit of olive oil, and bake in the oven according to the recipe direction. Once it has completely cooled add the salad and serve. 

Herb dressing. Our herb dressing recipe tastes great combined with the other Pizza Salad ingredients. Use store-bought or your favorite homemade Italian dressing recipe or Ranch Dressing. Additions. Top with your favorite pizza toppings or sprinkle on any of these tasting add-ins.

Storing + Side Ideas

Make ahead of time. To make this Pepperoni Pizza Salad ahead of time, separate the toppings in different containers and cover them tightly. Store in the refrigerator and assemble it all together right before serving. It should last 1-3 days in the fridge. Store the dressing in a separate jar in the fridge. Give it a good shake before drizzling it on the salad.
