Pumpkin Cake
2¼ cups all-purpose flour ½ teaspoon salt 2 teaspoons baking powder ½ teaspoon baking soda 2 teaspoons pumpkin pie spice 1 cup vegetable oil – canola works too 1 cup brown sugar ¾ cup granulated sugar 2 teaspoons vanilla extract 4 large eggs 3 tablespoons sour cream – or plain Greek yogurt 15 ounces pumpkin puree – not pumpkin pie filling

⅓ cup unsalted butter, softened – How to Soften Butter Quickly 8 ounces cream cheese, softened 1 teaspoon vanilla extract 3 – 3½ cups powdered sugar 1 tablespoon heavy whipping cream, if needed chopped walnuts, optional
