This is another tasty way to enjoy cauliflower as a side! Who knew it could be so versatile?! Mashed Cauliflower, Cauliflower Rice, and even Buffalo Cauliflower are some of the other ways we enjoy it.
Easy, Healthy + Tasty
One of my favorite vegetable side dishes is roasted broccoli – it’s so good! Since broccoli and cauliflower are so similar, I thought I’d try roasting cauliflower. We pretty much adapted our broccoli recipe for cauliflower and we were SO happy with how it turned out. The crispy crunch and the golden brown color that they get from the oven is so good. Not only is it delicious, but it’s healthy too! Cauliflower is very high in fiber which is great for overall gut health. It’s also very low in calories. One serving of cauliflower is only 25 calories. It’s also great for reducing inflammation because it has lots of antioxidants in it. Cauliflower is often used to replace many other carbs in things like cauliflower rice, cauliflower pizza crust, and mashed cauliflower!
