We Love Pie!

I mean, who doesn’t love pie? Pies are great all year around, but they’re especially perfect for fall and holidays like Thanksgiving and Christmas! Whether it’s a classic Pecan Pie or Pumpkin Pie, or something a bit less traditional, like Strawberry Pie or S’Mores Pie, we’re not picky about the type of pie in the Merkley house! We take pie-making seriously around here. Of course, you can use store-bought pie crust, but we even have our own homemade Easy Pie Crust recipe! Do you know what usually comes with making pies? Leftover pie crust scraps, of course! We don’t like to waste, though, so we’ve come up with a list of things you can do with your leftover pie crust!

What to do with Extra Pie Crust

You know when you roll out your pie dough with your rolling pin, shape it into the dish, fold the edges, and trim off the excess? And then you’re left with all those little strips of pie scraps? Before you throw those in the trash, wait! Let’s dive into what you can do with the leftover pie dough.

Freeze it

If you don’t want to use your leftover pie crust dough right away, freeze it! It’s best to form scraps into a ball before freezing so it’s easier to roll out when thawed. Wrap your dough in plastic wrap and store in an airtight container. You can store the crust for up to 3 months in the freezer.

Pigs in a blanket are perfect to make with pie crust scraps. Not only are they kid-friendly and have minimal ingredients, but they also make the best appetizer, snack, or even main dish if you make them with hotdogs! See how to make them here!

One favorite thing to do with leftover pie crust dough is to make flaky cinnamon squares!

Pie Crust Cookies

These are SO simple. Just roll out your leftover pie dough on a lightly floured surface until it’s nice and thin. Brush with some melted butter (or an egg wash) and sprinkle on plenty of cinnamon sugar. Cut into fun shapes with cookie cutters or slice into strips if you’re keeping it simple. Pop them onto a baking sheet, bake at 350°F for 10-12 minutes, or until the edges are golden brown.

Mini Pies

Pies but make them MINI! One of the best ways to use leftover pie crust, if you ask me. These sweet treats are bite-sized, easy to make, and a hit with the kiddos. We love the mini versions so much that we have recipes for both Mini Pecan Pies and Mini Pumpkin Pies!

Pie Crust Crackers

You can easily whip up some tasty pie crust crackers using your leftover dough! Just roll out the pie crust until it’s thin, sprinkle with salt, herbs, or cheese, and cut them however you like. Pop them in the oven at 350°F for about 10-12 minutes, or until they’re golden and crispy. These little snacks are perfect for dipping or enjoying on their own!

Danish Pastries

Danishes are usually made with puff pastry, but you can totally use your leftover pie crust! Just roll out the dough, fill it with a creamy cream cheese mixture and your favorite pie filling, and bake until golden and flaky.
